Chinese noodles with shrimps & wok vegetables

Method

1.  Soak the noodles in boiling water for 5 minutes until softened but still al dente. Drain and set aside.

2.  In a large wok, add half the sesame oil and fry the onions, garlic, chili and ginger, for about 2 minutes.

3.  Add the wok mix and cook for another 5 minutes.

4.  Add the remaining sesame oil, shrimps and curry powder and stir-fry for a few minutes until shrimps are cooked through.

5.  Add the noodles, the soy sauce and sesame seeds. Toss again for a few more minutes, then remove from the heat.

6. Sprinkle over the coriander leaves, fresh spring onion and serve with lime wedges.
