Sea Bass Ceviche with Passion Fruit & Chili

Method

1.Using a knife, separate the fillets from the fish, carefully removing the bones and skin.

2. Cut the fillets into approximately 2 cm cubes and place them in a bowl in the refrigerator.

3. In a blender, combine all the ingredients for the passion fruit leche de tigre except the passion fruit juice. Blend for about 30 seconds until you get a smooth sauce. Pour the sauce into a bowl, add the passion fruit juice, and mix well.

4. Remove the sea bass from the fridge, add the lime juice and salt, and let it sit for 5 minutes. Then, add the onion and olive oil, and mix well.

5. Place the ceviche in a deep plate, pour the leche de tigre over it, garnish with coriander leaves, and serve immediately.
