Method
- Bring a pot of water to a boil and cook the gnocchi for 1-2 minutes or until they float to the surface. Drain and set aside.
- In a skillet, lightly sear the halved cherry tomatoes over medium heat until they start to soften and release their juices. Remove from heat and set aside.
- In a large bowl, combine the salad leaves, cooked gnocchi, chopped mozzarella, and seared cherry tomatoes.
- Add torn basil leaves for extra flavor and freshness.
- Drizzle olive oil over the salad and season with Maldon salt and pepper to taste.
- Toss gently to combine all the ingredients and ensure they are coated in the dressing.
- Serve the salad immediately as a side dish or light meal.
